Happy New Year

Now that it’s a new year, I’ve decided to start up the blog again!

There are plenty of recipes that have been amazing and some that have fallen flat over the past few months, and I’m here to tell you which are worth trying.

Asian Stirfry

1 package of steak, cut in slices or cubes (can use chicken or pork if desired)

1 package of noodles

1 pepper, cut in slices or cubes (can be green, red, yellow or orange)

1 orange, peeled and segmented

1 can of bean sprouts, drained

1 can of water chestnuts, drained and cut if desired

Soy sauce

Hot sauce

Salt and Pepper to taste

In a wok put some oil. Add the steak, this can be frozen, it will just be slightly watery. Add soy and hot sauce to the steak. Cook for a while until steak is beginning to cook through. Add the pepper, bean sprouts and water chestnuts. Let simmer together. When mixture is coming together add the orange and carefully stir.

You will need to cook the noddles in boiling water separately, then combine with the mixture when ready.

Easter Ham Leftovers

Sometimes you just have to have breakfast for dinner. I usually love making pancakes, but we had so much ham left over from Easter weekend.

So instead, on Monday night I made breakfast burritos for dinner.

I scrambled egg with cubed pieces of ham and put it in a wrap with American cheese.

It was quite good, even though I am not a fan of burritos.

Crab Legs

For my boyfriends birthday his mother gave us bundles of crab legs. Don’t ask me what kind, I THINK they were Alaskan, but I am not sure. But they were HUGE if that helps anyone compare.

The only way I have ever made crab legs is by boiling them in a large pasta pot of water and Old Bay seasoning. These crab legs were just too large.

Here’s what I did:

One cluster, which was just two large legs, I broke at the joints and put them in a pot of boiling water and Old Bay seasoning. But I kept the other cluster whole and put them in the oven.

I found this little tidbit online:

Baking in Oven - If you have a lot of crab legs and can’t fit them all into the pot, you might want to consider placing them in the oven on a sheet of aluminum foil on a cookie sheet. Wrap the crab legs in the aluminum foil with a small hole for the steam to escape and bake them for around 15 minutes at 450 degrees F.
 
In the end both turned out really well, but I still prefer to boil them I think.

Easy Crock Pot Chicken Tacos

On Monday, I decided I had to finally make these chicken tacos. After buying all the ingredients and toppings, they were calling my name.

Easy Crock Pot Chicken Tacos…dump 1 envelope of taco seasoning, 6 boneless, skinless chicken breasts & a jar of salsa in the crock pot, stir and cook on high (4-6 hrs.) or low (6-8 hrs.) Should be able to shred with a fork. Place meat mixture in tortillas and top with your favorite toppings!

I always try to cheat and buy those taco packages in the store - they come with hard and soft shell tacos, the seasoning and hot sauce. I buy those because I like hard shell, and my boyfriend likes soft. This is the best of both worlds and has about the same number of tortillas that you would actually eat.

My chicken, after cooking on low for 8 hours, came out perfectly. My only complaint, the mixture in the crock pot came out watery. I’m sure this is a combination of water from the cooking chicken (frozen) and the salsa, but I needed to drain it a little bit.

Toppings - I could have done tons more, but I went with chopped onion, cilantro, cheese, sour cream and salsa.

Weekly Recipes

Every time I know I have to go grocery shopping, I try and think of a weeks worth of recipes so I know what I’ll buy and use in a week. So yesterday I got to the Internet and looked for things I have never made.

Here’s what I came up with:

PFChangs meal - these are easy to make since all I do is put the contents of a bag into a wok. They are definitely good for those nights you want something good, but might not have the time.

You HAVE to make this recipe!

I don’t praise recipes all the time, but this one was great! My boyfriend (who complains about chicken on a regular basis) loved it! I am definitely keeping this recipe.
